Paramount Crystals - Use this product to help thin chocolate coatings down, when necessary. Also, can be used in butter cream icing for high humidity regions. Has a higher melting point. Won't break down as quick as shortening. If you're having difficulty melting your chocolate coatings down, add up to 2 TBSP melted Crystals (melted) to one pound of coating (melted). this will aid in thinning down the thicker coatings, typically your whites or colors. In high humidity areas, for butter cream icing - reduce shortening amount by 1/5 and use same amount of Paramount Crystals in it's place. Melt the Crystals and add to mixed icing. This clear and tasteless ingredient repels moisture in butter cream. It will keep your icing beautifully white, dry, and workable.
